HOW TO MAKE DELICIOUS ITALIAN PORK SAUSAGE AND BEAN SOUP
In a large pot or dutch oven, brown the sausage. Scoop out and set aside.
If there is about 2 Tbsp of fat in the pot after cooking the sausage, you won’t need to add extra oil but if it looks dry add 2 Tbsp SPAR extra virgin olive oil.
Add the garlic and sauté for one minute.
Then add ½ a bag of the soup mix to the pan and saute for about 5-10 minutes or until it caramelises a little. Add the rest of the soup mix, stock, canned tomatoes and ½ the cooked sausage.
Bring to a simmer, turn the heat down to low and leave to cook for 30 minutes.
Season well with salt, pepper and sugar.
If the soup is too thick, add a little more stock.
Stir in the basil and serve, topped with the rest of the sausage.
