Lemon Basmati Rice Stuffed Whole Chicken Recipe
SERVES 6
INGREDIENTS
FOR THE CHICKEN

- 1 whole chicken
FOR THE MARINADE
-
- 2 cloves SPAR Freshline garlic, minced
- 1 tsp paprika
- 2 tsp chopped fresh or dry thyme
- 4 Tbsp SPAR butter
- 1 tsp each salt and pepper
FOR THE RICE STUFFING
- 2 Tbsp SPAR olive oil
- 1 SPAR Freshline onion, finely chopped
- 1 SPAR Freshline red pepper, chopped
- 2 cloves SPAR Freshline garlic, minced
- ½ cup SPAR brown basmati rice
- 3 Tbsp SPAR Freshline lemon juice
- 2 SPAR Freshline lemons zest
- 1 cup warm chicken stock
- ¼ cup freshly chopped SPAR Freshline parsley
- Salt and freshly ground pepper
- Roasted potatoes and vegetables for serving *optional
METHOD
TO MARINATE THE CHICKEN

- In a small bowl, combine all the marinade ingredients and coat the chicken in the butter. Leave to marinate for about an hour.
TO COOK THE RICE STUFFING

- Heat the olive oil in a pan and sauté the onions, red pepper and garlic. Add the rice and allow to lightly toast. Then add the lemon juice, zest and chicken stock and simmer until partly cooked – about 20 minutes.
- Stir in the fresh herbs and season with salt and pepper. Set aside.
TO STUFF AND BAKE THE CHICKEN

- Preheat the oven to 200ºC.
- Remove the chicken from the fridge and stuff it with the rice filling and place it into the buttered baking tray.
- Tie the chicken legs with butcher’s string to prevent the stuffing from falling out.
- Bring the oven temperature down to 180ºC and roast for 30 minutes then remove and baste with the tray juices. Put it back in the oven and roast for another 30 minutes or until golden and fully cooked.
TIP
- Place some veggies and potatoes around the chicken to roast along with the meat.
