Mexican For Breakfast

We all love Mexican food, with sour cream, guacamole, extra cheese, bit how about some for breakfast? SPAR Savour magazine introduces the breakfast enchilada bake.

INGREDIENTS

    • 500g beef sausage
    • 2-3 Tbsp SPAR Freshline spring onion, chopped
    • 2 cups grated cheese like SPAR White Gouda Cheese
    • 1 can (410g) drained red kidney beans
    • 1 cup ready-made jar salsa *optional
    • 6-8 SPAR white wraps
    • 6 large SPAR eggs
    • 1 cup SPAR sour cream
    • 1 cup milk
    • Salt and milled pepper to taste
    • 200g SPAR back bacon, diced

FRESH TOMATO SALSA

  • 1 SPAR Freshline avocado, diced
  • 1 SPAR Freshline tomato or 10 SPAR Freshline cherry tomatoes, diced
  • ½ SPAR Freshline red onion, finely diced
  • 1-2 Tbsp SPAR Freshline parsley, chopped

METHOD

  • Remove the beef sausage from its casing.
  • Heat a large non-stick pan over medium-to-high heat and cook the sausage until brown, breaking the clumps apart as you cook.
  • Spoon into a bowl, add the spring onion, ½ the cheese, beans and the salsa. Mix.
  • Divide the cooked beef between the wraps and roll them up.
  • Arrange the rolled wraps side-by-side in a baking dish, roughly 25cmx20cm in size.
  • Use the same pan as the sausage and cook the bacon until it just starts to crisp up.
  • Mix the eggs, cream, milk and seasoning together well.
  • Scatter the bacon over the arranged wraps.
  • Pour the egg mixture over then scatter the leftover cheese.
  • Leave to stand for 30 minutes before baking at 180ºC for 30 minutes or until cooked and golden.
  • Leave to cool before refrigerating. It will last in the fridge for 4 days.
  • Reheat in the microwave, oven or airfryer.
